Looking a little bit through the man pages of rsync I found two flags to show the overall status of the currently running rsync process.

--info=progress2

display the overall status of the process

--no-inc-recursive

crawl all files and folders upfront

Unless --no-inc-recursive is used, rsync looks only a few thousand files ahead and recalculates the overall number of files causing a jump back to a lower completion percentage, which causes headaches ...
